This is a limited series for syoubu(sashimi), using Special stainless steel for which prices are reasonable while retaining the performance of Chef Honyaki. A Honyaki (glost-fired) knife retains its sharpness for a long. Sakai Takayuki's Honyaki Series are top-rank products that ensure a wonderful sharpness and manufactured with a unique traditional method. Honyaki is true-forged knives, made from one material. Honyaki knife is generally a top-grade knife using specific steel (blue or white steel). Tokushukou Honyaki aimed at reasonable cost by using special stainless steel as Honyaki (Mizuyaki) but retaining the performance of Chef’s Honyaki.
