Japanese types of knives
Special sharpening (Honbatsuke in Japanese)
Our Knives are shipped basically standard sharpening with the blade for general use.
Professional chefs do “Special-sharpening, Honbatsuke” (本刃付け in Japanese), which means special sharpening with the blade for adjusting the certain use.
We can give it Honbatsuke (Special Sharpening) upon your request as an option.
We recommend that customers sharpen their knives before they become too dull. Sharpening a very dull knife will require much more time.
Western types of knives
All knives are already sharpened. It won't be needed for special sharpening (Honbazuke) for Western knives.
